Vegan Dark Chocolate Lavender Truffles

There's a wonderful lavender farm by my home called Peace Valley Lavender Farm in Doylestown, Pa., it's the perfect destination for that Sunday drive but if you don't live close they ship as well.

Vegan Dark Chocolate Lavender Truffles

8 oz. dark chocolate (vegan)
1/2 cup coconut milk (shake before opening) 
2 tsp. dried culinary lavender
1 tsp. vanilla extract or St. Germain          Elderflower Liquor 
Cocoa powder if you want to roll the truffles instead of dipping

8 oz dark vegan chocolate
2 tsp. Earth Balance


  1. Warm coconut milk in medium saucepan with the lavender buds until it comes to a light simmer, remove from heat. Let steep while your cutting your chocolate.
  2. Chop 8 oz of dark chocolate into small pieces and put in a medium heat-safe bowl.
  3. Strain the coconut milk-lavender mixture with a fine mesh strainer, discarding the lavender buds and then pour the infused coconut milk over the chopped chocolate.  Add vanilla or the liquor and stir until all the chocolate is melted and the mixture is smooth.  You've made vegan ganache!!!
  4. Cover with plastic wrap, placing it directly on the top of the ganache and refrigerate until firm, at least two hours.
  5. After the ganache firm to the touch, scoop and roll out all your chocolate into 1 inch balls. This gets messy, but it's worth it.  I lay them on a parchment lined sheet pan and pop them back in the refrigerator while I get the chocolate ready for dipping.  Or you can roll them in cocoa powder to finish if you would like.  I like dipping.
  6. Melt 8 oz. of vegan chocolate and Earth Balance butter in a double boiler until smooth and melty.
  7. Using two forks dip the chilled truffle into the melted chocolate, rolling to cover.  Scoop up with a fork, tapping with the other fork to remove excess chocolate.  A nice thin coating of chocolate is what your looking for.  Place coated truffles on a parchment lined sheet pan and sprinkle with lavender buds.
  8. Repeat with the rest of the truffles.  Place back in refrigerator until coating has hardened, truffles can be stored in an airtight container for up to two weeks.  Serve at room temperature.
