Valentine’s Dinner at Home
Put on your pj’s and light a fire, here is a great Asian inspired three course dinner for you to create at home. There seems to be a lot of pressure these days about what to do to show the one you love how much you mean to them, but I feel the greatest gift you can give to the one that you care about the most in the world is your time, attention and maybe dark chocolate fondue with strawberries…
The Menu- Asian Chop salad with Soy-Lime vinaigrette, Soba noodles with wild mushrooms, green soy beans and truffle oil and dark chocolate fondue with fresh strawberries and bananas- all vegan, easy, tasty and everything can be found at your local market.





Asian Chop Salad for Two
2 Belgian endives, sliced
8-10 radishes, diced
1 carrot, grated
½ English cucumber, diced
1 avocado, ½ diced, ½ sliced for the top of the salad
3 Tbsp. fresh mint, chopped
3 Tbsp. Fresh basil, chopped
6 Tbsp. fresh cilantro, chopped
1 green onion, sliced
Lightly toss all above in soy-lime vinaigrette, plate on two chilled salad plates and top with sliced avocado.




Soy- Lime Vinaigrette
1 clove garlic, minced
1 tsp. fresh ginger, grated
1 lime, juiced
1 Tbsp. rice wine vinegar
1 Tbsp. soy sauce
½ tsp. toasted sesame oil
1 Tbsp. sugar or honey
4 Tbsp. canola oil
Place all ingredients in jar with lid and shake, shake, shake.



Edamame Soba Noodles with Wild Mushrooms
8 oz. mix mushrooms of your choose, I used shittake, cremini and oyster
1 clove garlic, minced
1 tsp. ginger, grated
¼ cup canola oil
4 tsp. soy sauce
Pinch of salt
1 cup white wine
2 scallions, sliced
2 cups frozen Edamame, shelled
½ lime, juiced
3 tbsp. each fresh, cilantro, mint, basil, chopped
White truffle oil
3 bundles, soba or Japanese buckwheat noodles, cooked as directed on back of package.
In large skillet set on medium heat add canola oil, when oil gets hot add mushrooms . Cook down until mushrooms start to brown about 10 minutes, add garlic, ginger, soy sauce. Cook and continue stirring for another 5 to 10 minutes until the mushrooms are nice and caramelized. Turn off heat & add white wine to deglaze pan, turn back on to medium heat, add scallions, edamame then soba noodles. With thongs keep everything moving so the noodles absorb the sauce, add lime juice, fresh herbs and salt to taste. Arrange on two plates top with a drizzle of white truffle oil.



Vegan Chocolate Fondue
1 bag vegan chocolate chips
½ cup coconut milk
½ cup strong coffee
2 Tbsp. liquor of your choice, Kahlua and bailey’s Irish crème
In microwave safe bowl add coconut milk, coffee, liquor, cook on high two minutes, add chocolate chips and stir until smooth. Serve with fresh strawberries, bananas and pretzels.
