Grilled Tofu Tacos with Peppers and Onions

Simple, Delicious, Quick and Nutritious

These tacos are super delicious and have endless possibilities. I think the great thing about a dinner like this is anything goes… Have a ripe avocado? Add it. A few radishes left? Slice them up. Tacos are an excellent opportunity to clean out that fridge. I lay everything out buffet style and everyone can help themselves. These tacos have grilled tofu in a green marinade, fajitas style peppers and onions, fresh cilantro and smokey chile lime mayo!

Green Marinade

This is not only a marinade it also makes a great dip or spread.

Ingredients
Zest of 1 lime
juice of 2 limes
1 Tbsp. soy sauce, ( gluten free if needed)
2 cloves of garlic, chopped
2 scallions, white and green part- chopped
1 Tbsp. grated ginger
1 cup fresh cilantro
1/2 cup canola oil

Directions
  • In blender- soy sauce, lime juice and zest, garlic, scallions, ginger, cilantro. Pulse on low to get everything moving. Slowly pour in oil and blend until combined.
Use as marinade for tofu or portabellas, spread on grilled vegetables.
 

Grilled Tofu in Green Marinade

Ingredients
1 package extra firm tofu (about 1 pound depending on brand)
1 recipe of Green marinade

Directions
  • Drain block of tofu in flat bottomed colander. Place plate on top of tofu and then top with a standard size can on top of plate- this presses out excess water.
  • Let tofu drain in colander for thirty minutes while preparing green marinade.
  • Slice tofu into ½ inch slices (about 9 slices).
  • Lay tofu pieces flat in a 9x9 glass shallow pan and pour green marinade over, flip the tofu over so both sides get covered in marinade.
  • Cover with plastic wrap and refrigerate for 30 minutes up to over night.
  • On stovetop grill on medium high brush the grill with oil of your choice.
TIP: Make sure the grill is hot before adding tofu- this will prevent sticking.
  • Place tofu on grill and don’t touch it!
  • Let it cook for 5-7 minutes before checking it, the more you play with the tofu on the grill the more it will break and stick.
  • With a thin spatula carefully flip tofu over and grill the other side.
  • Remove from grill and cut in half so it fits in taco better and lay on platter, top with fresh cilantro and lime wedges.
 

Fajitas style Peppers and Onions

Ingredients
1 red belle pepper
1 belle pepper (other color)
1 white onion

Directions
  • Slice peppers and onion into strips, set aside. In a cast iron skillet on medium heat add oil -when hot add sliced peppers and onion.
  • Add salt and pepper to taste, stir with a wooden spoon.
  • Continue to stir every few minutes until the peppers and onion are caramelized.
  • Serve right in cast iron skillet.
 
 
 
Warm corn tortillas on cast iron skillet on about 30 seconds on each side. Cover with towel until ready to use.



 

Smokey Chile lime Mayo

Vegan
Makes just under a cup of flavored mayonnaise

Ingredients
1/2 cup Vegenaise
Zest of a lime and 1/2 of the juice
1 tsp. hot sauce
1/2 tsp kosher salt
Pepper to taste
1/2 tsp. chili powder
1/4 tsp smoked paprika


Directions
  • Mix everything together in a medium bowl.
  • Put on everything.
