Six Minute Orange Chipotle Quinoa and Black Rice Salad

Yes… This recipe really does take 6 minutes to make.
I buy pre-cooked quinoa and black rice pouches, it makes a grain salad a cinch. Everything gets dumped in a bowl with a quick vinaigrette.  I know that cooking quinoa is easy and so is cooking rice but this recipe is for the 5:45 am what I’m I going to pack for lunch, meal ( me this morning).   


Super healthy and delicious, I find if you have healthy and tasty food options available on hand you're less likely to gravitate towards junk.   


I use one whole chipotle in adobe and the sauce for this recipe and it has some nice heat but feel free to add less if you don’t like things that spicy.

Six Minute Orange Chipotle Quinoa and Black Rice Salad

Makes about 1 ½ Quarts


Ingredients
  • 1 8 oz Package Pre-Cooked Quinoa (I use Simply Balanced Brand from Target)
  • 1 8.5 oz Package Pre-Cooked Cultivated Wild Rice (I use Simply Balanced Brand From Target)
  • 1 15.5 oz Canned Chick Peas,  Drained and Rinsed
  • ½ Small Red Onion, Diced
  • ½ Cup Chopped Fresh Parsley



Orange Chipotle Vinaigrette
  • 1 Orange, Zest and Juice (about ¼ cup juice)
  • 2 Tbsp. Cider Vinegar
  • 1 Whole Chipotle in Adobo, Diced
  • 1 tsp. Adobo Sauce from the Can
  • ½ tsp. Sea Salt
  • ½ Cup Extra Virgin Olive Oil



Directions
  1. In a large bowl add rice and quinoa, break up with your fingers.  Add chick peas, red onion and parsley, set aside.
  2. In a medium sized bowl add orange juice, zest, cider vinegar, chipotle, adobo sauce and salt.  Mix together with wire whisk and slowly pour in extra virgin olive oil. 
  3. Pour over grain mixture and stir until combined. Check for seasoning.  
  4. Refrigerate until ready to serve.
